Breakfast Casserole

Cooking Time: 1 hour

Ingredients:

 

8 slices Texas Toast, cubed

8 oz. mushrooms, sliced

4 scallions, chopped

1/2 lb. bacon, cooked & crumbled

1/2 lb. sausage, cooked & chopped

1 lb. shredded sharp cheddar cheese

6 eggs

3 c. milk

3/4 tsp salt

3/4 tsp dry mustard

Instructions:

 

  1. Coat 9x12 baking dish with cooking spray.  

  2. Spread bread cubes in prepared baking dish.  Sprinkle cheese over bread followed by mushrooms, scallions, bacon and sausage.

  3. In a separate bowl, combine eggs, milk, salt and mustard and wisk until frothy.  Pour egg mixture over layered mixture in baking dish.

  4. Cover baking dish with plastic wrap and refrigerate overnight.

  5. Bake uncovered in pre-heated 350 degree oven for 40-45 minutes.  Let rest for 5-10 minutes and serve.
